The Blue Agave

The blue agave (agave azul tequilana weber) has long bluish green spiny leaves with sharp points and a large heart (called piña or pineapple) from which the juices are extracted and then distilled twice.

Some of us may have sworn tequila off the last time we spent four hours in the bathroom as punishment the morning after a long night.

Margaritas and tequila shots were once the standard ways to drink tequila, but with these finer tequilas, there's an increasing trend toward drinking premium tequila like a high-end Scotch - slow, and straight-up.

Of course, there is neither right nor wrong way to drink tequila, but it's always good to know a few things before sallying forth into the night with tequila. 100% agave costs a lot more, but here is where "You get what you pay for" really matters. The higher the percentage of agave sugars in the tequila, the lower chance of waking up with a killer hangover. 

It takes 10 years to grow the agave, and then you have to cook it for two days, cool it for another day, ferment for another day and wait for another day. So it takes about 10 years and four days to make one bottle of tequila.

Tequila brought out the best and the worst in everybody. It depends on how you handle it. It could reverse the personality in a person or vice versa. The quiet type became talkative; the timid became bold, etc.
